Star Anise
Origin and background
Star anise is a spice obtained from the common star anise tree (Illicium verum). The fruits of the star anise tree are star-shaped dark brown pods with a pea-sized seed in each of the eight segments. It is used whole or ground as a spice.
Star anise comes from southern China and northern Vietnam, where it has been known for over 3,000 years. Today, it is also grown in Cambodia, Laos, Japan, and the Philippines.
Star anise was brought to Europe by English sailors in the 16th century, when it was used to flavor liqueurs in France, Germany, and Italy. The French chemist Gattefossé (the user of the term aromatherapy) concluded that when essential oils or their ingredients are added to products such as liqueurs, they can reduce the toxicity of alcohol by completely natural means. The star anise was introduced in European cuisine only in the 17th century, when it was used as a tea spice in the Russian court.
Although the aroma of star anise seeds comes from anethole, or aniseed bean (which also gives the prominent taste to anise seeds), anise and star anise are not biologically related. The similar name derives from their similarity of smell and taste. Although star anise smells exactly like anise, its taste is fuller, more pungent, and more burning.
